A friend of mine, Andrea, is an absolute whizz with herbs. Once when I was struggling with hormonal balance, she gave me some rose geranium tea bags. I subsequently planted a plant and now regularly make the tea using leaves from the plant. This tea helps me relax, feel more uplifted and this particular blend below also helps with digestion, warming and liver care. It is lovely warm but also works very well as an iced tea on hot days!
Swiss chard and cheese gluten-free pancake roll-ups
A very easy way to get fussy eaters to accept spinach, this is a very quick meal to make when you’ve run out of ideas!
Steamed asparagus with avocado, olive and mustard salad
I bought some fresh asparagus a few days ago and on the first night, I had it lightly steamed with some lemon juice and himalayan salt, with half a perfectly ripe avocado on the side, it was delicious! However, the second night, I just felt like more shoosh, more finger licking and just more…So I did this:
Pumpkin fritter soup
This soup reminds me of coming home from school on cold winter afternoons and finding that Mom had made pumpkin fritters, my favourites! I only found out years later that it was a true labor of love, as apparently, she can’t stand them!
Fresh Fig, Banana and Tahini Smoothie (vegan, gluten-free, grain free, raw)
I literally dreamed up this smoothie after buying some fresh black figs at the farmers market and kept making it until I ran out of figs! It was a winner with my daughter too, she is a true critic when it comes to green smoothies!
PMS Porridge (vegan, gluten-free)
When the first day of my period hits all I want is comfort food and this porridge really does the trick!
Passion fruit and Chia Breakfast Pudding (vegan, gluten-free, grain free)
Easy to make and tremendously satisfying, this is a great Sunday morning breakfast!
Beetroot Hummous (vegan, gluten-free, grain free)
The deep reddish purple colour of this hummous makes it a great dip to take to a party, always very impressive! It has a slightly sweeter taste than the classic hummous and is a great way to get reluctant palates to eat beetroot!
Classic Hummous (vegan, gluten-free, grain free)
A firm favourite in our house, this hummous never has to be refrigerated as there is never any left to keep! My daughter especially loves dipping carrot sticks and corn chips into it!
Purple Slaw (vegan, gluten-free, grain free)
A great way to use up left over beetroot (you know those three which have been lying in the cupboard as every single other vegetable gets used first? Yes, those ones!)
