The heat has arrived here in Pointe Noire and in my Follicular phase I’m craving fresh and light foods! These rice rolls are simple, delicious and surprisingly filling!
Banana cake (gluten-free, grain free, dairy free, contains eggs) Version française ci-dessous
This recipe is another one of those that happened because I had some bananas I wanted to use and I also wanted to see if garri could work for a cake and not just biscuits. The answer is yes! This cake has no added sugar so if you want it sweeter add some honey, sugar or maple syrup when you serve it.
It is gluten free, grain free and dairy free but not vegan (because of the eggs).
Chickpea salad with tahini-miso dressing (gluten-free, Vegetarian)Version française ci-dessous
This was a happy accident over the Christmas holidays and it has since become a staple! Perfect for any time but especially for the Luteal phase of the cycle, add some cooked brown/basmati/wild rice or a baked sweet potato to make it even more phase-friendly.
Mommy’s super green smoothie ( vegan, gluten-free, grain free, plantbased, refined sugar free) Version française ci-dessous
This smoothie is quick to make and easy to digest and contains protein, healthy fats, carbohydrates, greens, fibre and spices. It is anti inflammatory , immune boosting, good for blood sugar balance and great for your hormones (especially during the Follicular phase!). My daughter asked for a taste and had some too, so it’s a win!
Sweetie pie’s Strawberry smoothie (vegan, plantbased, gluten-free, grain free, refined sugar free ) Version française ci-dessous
My daughter LOVES strawberries and lately she hasn’t been so keen on eating her veggies so I came up with this smoothie to fill her up with some of the good stuff!
Oats and cassava pizza base (vegan, gluten-free, plantbased, oil free ) Version française ci-dessous
This pizza base bakes with crispy edges and a chewy centre, which is exactly as I like it. It’s firm enough to carry a load of toppings and doesn’t go soggy or crumble easily. Best eaten straight from the oven!
Pineapple pie (vegan, gluten-free, plantbased, oil free)..version française ci-dessous
Based on my apple pie recipe, this pineapple pie is a refreshing dessert (or weekend breakfast!) whilst being low in sugar and high in fibre!
Air fried banana bread donut holes (vegan, plantbased, gluten-free, grain free, oil free )
I’ve been experimenting with my air fryer and cassava flour and I’m having so much fun! These are super simple, so quick to make and a winner for my whole family, I hope for yours too!
If you don’t have an air fryer, you can try baking these in the oven, just keep the temperature the same and double the cooking time. I haven’t tried it this way yet, so let me know if you do!
I would highly recommend investing in an air fryer though!
Dark chocolate and seeds garri cookies (vegan, gluten-free, grain free, plantbased )
Inspired by a recipe made by @vegannigerian these are super easy, filling and full of goodness! Find the original recipe on her site, link in her bio @vegannigerian.
Dhouha’s cookies (vegan,gluten-free, plantbased, oil free )
My friend Dhouha recently completed her Masters degree, all whilst working full time, being a Mom and a wife and serving as president of the after school activity club! We had tea to celebrate and I made these from what I had in the house, luckily she loves mint:-)!
